The food processor would grind cooked beans – for dried beans I would recommend the food mill attachment on the standmixer. The mill can do very fine powder like grinding or course – very easy to use

I know professional chefs/cooks use a copper bowl to whip egg whites and only use the bowl for this purpose. Should home users use an extra bowl for egg whites only, would the quality be better than using the bowl for everything.

Hi,
you know a copper bowl is such a tresusre and pleasure to own – but yes very special! I use mine regularly and the result is truely sensational BUT the stainless stell bowl is the absolute next best thing. Now a second bowl is really handy – i think you would get lots of use and ease having two – but NO you do not need to have one especially for egg whites. Stainless performs well for all textures, consisitencies and mixtures and only needs to be washed and well dried in hot soapy water.

the artisan / KSM 150 is the standard home domestic model. It has a laod limit of about 1.5 kg total weight. The larger model which is the K5 delux has a load limit of about 1.65 kg total weight but also has much larger attachments. I actually have both models in the test kitchen and enjoy using both. Both have direct drive, and all the other great KitchenAid benefits. The K5 is a good choice if you wish to regularly make pasta and bread. You will amazed at how beautifull the KitchenAid mixers mix and how very quiet the motor is. Oh the other choice is colour …. the K5 has 5 choices (thats if the ‘yellow’ is still available otherwise 4 colours) the KSM 150 has 20 colours.
which ever model you will soon be a kitchenaid fan ….fanatic (as i like to say)

absolutely the food grinder is great for grinding biscuits ( and vegentbles, firm cheese, bread, herbs, some nuts etc etc). be sure the attachment and grinding plates are dry before you begin to keep the biscuit crumbs dry.

Try leaving the pavlova to cool in the oven until cold. Reduce the cooking time by a few minutes to allow for the oven to cool down, gradually. Try adding a pinch of cream of tartar to your mix also. Hope this helps. Carol

goodness i don’t think answered you – oops! so therefore sorry for the delay… please read on!
for pavlova firstly do have a kitchenaid standmixer? i am guessing so – hopefully yes. the way the planetary action beats stabilises the mixtures so well – the end result is fabulous. there are a couple of smallish tips like adding a pinch of cream of tartare to the egg whites before beating and cooling the meringue slowly – these tips some cooks swear by – i simply stand by the beating / stabilising of the mixture.
the whole issue and result is based on the way the egg whites are beaten. the mixture must be very stable and extreamly firm – so beat very well until the sugar is completely dissolved in the meringue (rub a little inbetween your fore finger and thumb and it needs to feel very smooth not gritty. gritty is undissolved sugar)
bake the meringue on the middle shelf of the oven on about 150C. cook until dry and crisp and leave the door ajar during the cooling.

Hi Karen,
the KA food processor has three bowls. The small bowl with the small blade is good for a chili paste BUT you would have the seeds etc. Unless you split the chili beforehand and scrap out the seeds.
There is a fabulous attachment which fits onto the standmixer (there are several fabulous attachments that do various things) but the ‘food strainer’ ‘ removes the skin, pith and seeds through a seperate chute which results in a smooth puree – however you would need to do commercial syle quantities to make it useful – also the food must be cooked and therefore softened for the strainer.
I think the food processor is the appliance that best suits you in this instance.

I’ve just bought the grinder attachment for my mixer and am trying to learn how to make the most of it. Can i only put cooked vegetables through it or can it take raw ones? The grinder is my favourite attachment. You cannuse it for all cooked and raw meats, vegies, fruitsa, bread etc. it is however not suitable for coffee beans or nuts as these are too oily and the wrong size to fit into the grinder workings (they jam the unit). Pop onto u tube and select kitchenaid food grinder… you can watch me cooking & explaining a little more.

I was a little disappointed to read the running time of my KitchenAide Mixer is recommended to be 10 minutes as it does get hot. It is a little difficult if you have to do a few things with the Unit and need to stop star every 8 to 10 minutes. Could you please tell me how to get around this problem and how long does the Unit need to be rested before re using it again..

10 minutes in the KitchenAid standmixer is actually a really long time. Most breads will knead within 4 minutes or so and creaming butter and sugar will onlky take a maximum of 4 or so minutes. … often it is ready within 3 minutes.
The mixer has a fabulous planetary action which moves the beater to so many points in the bowl (67 for the whisk attachment). I actually have only one rcipe for a special snow pavlova which is 10 minutes stright whisking. Yes after this you would turn the machine off and allow it to cooldown a little.
As the standmixer is so robust it is used in many many rstaurants & cafe’s where it is truely put through it’s paces!
Let me know any recipes you have that you might want longer mixing than 10 minutes, in 9.9 % of occasions the recipe will not need this much mixing if the KA standmixer is used.
Cooling only takes a few minutes and i use this time to have a little tidy up and meausure of of ingredients… truely you will not find this little cooling time a problem

I can only find 1 photo of blueberry on the net but it is a small pic and I can’t quite get to see the colour I don’t suposse you have a close up photo of one do you?? funny enough Yellow is my other favourite colour.but I have my heart set on purple.I am thinking they probably won’t bring one out until there 100th birthday and then that would make sense.(cause it is such a wonderful colour)I don’t think I could wait another 10 years for a purple,my kids would all have left home by then and noone to cook for.lol.thanks for looking into this for me.

a good tip is too have the meat / chicken / fish well chilled.

You mentioned in one the post that K5 has got 5 colors (4 colors now). So far I could only find 3 (red, cobalt blue and yellow) what are the other colors?

I am lucky enough to have a magestic yellow & empire red K5 mixers. I think the availble colours are white, red, cobalt blue and possibly brushed nickel… but please confirm this with michelle or lee.

The food processor is fantastic and yes initially it looks like there are attachments, extra and additional bits & pieces! Don’t worry – soon you will be an expert.
please have a look on the Peter Mcinnes website for the in store demonstartion programe. I also am on a foxtell show twice a month. Are you able to watch TVSN . the next segment is on at 1.30 pm. on the 22nd April.
NO, I do not have any classes planned for Sydney.
However let me give you a couple of tips
1. the processor has 3 bowls. there is also a box that holds all the blades & discs. There is also a citrus press – these fits into the biggest bowl.
2. The biggest bowl must always be on the motor for the unit to work. The large ‘all purpose’ blade sits into the biggest bowl.
3. The ‘medium’ bowl sits inside the big bowl and the ‘slicing & shredding’ discs are mostly used in the medium bowl (but can ALSO be used in the big & medium bowls)
4. The little bowl (for small amounts of say pesto, icings, mayonnaise etc) sits inside the big bowl and has its own little ‘all purpose blade’
5. There are recipes pn the Peter McInnes web site too. Select the recipes tab, then select food processor recipes. I have written the recipes so they are easy to follow. To begin with try the coconut cup akes & purhaps the spanish style meatballs.
Once you begin cooking with the processor you will love it!
Good Luck – begin playing with the processor, select a recipe from the recipe website and then add a couple of your own…soon you will use it constantly – it is so effecient.

Jo, I have the KSM150 stand mixer and I love it. I have been saving feverishly for some attachments, but now wondering if I should get the food processor instead….. I grew up in a home that NEVER used a food processor so don’t know what it’s capabel of and I’m not one for a million different gadets. Is there much double up with the food processor and the mixer attachments? I ‘m struggling to get my head around it all!!!!

yes i know! this is a constant question for many and to tell you the truth it is all about your needs!
yes the standmixer with attachments just about does everything… as a base you need the food grinder (mincing etc) and rotary shredder slicer (slice, shred, chop) . After this more attachments are great such as the food mill and pasta roller & cutter set.
you can do most things except puree say a soup. pastry & scones are excellent in the standmixer – you just need a little practice as it is a new technique and initially most people over mix them and make them tough. the standmixer is so very quick!
however, the food processor is sensational for pastry, scones and pureeing. but them again the blender is also the best at pureeing and batters, smoothies, not to mention ice!
see now i am talking about 3 applinances – sorry!
but as you have a standmixer, i think you would benefit from adding attachments and then if you still need more get the processor and then the blender!!

Hi Kelly,
The standmixer is an all metal construction- the total thing – except for the fuse gear which has a nylon section. This is specifically desighned this wasy so it can easily and affordably be replaced if machine is ever overloaded (total weight capacity of 1.5 kg). This is about double 2 x 750g loaves of bread or a double quantity of pasta. The only time you can be weary of overloading is with doughs and must use the mixer on speed 2. This speed also duplicated the spead asper which you should knead for good volume and gluten development. I use all 10 speeds for beating cakes, mincing, grinding, whipping etc – from 6 -10 mostly depending on what i am cooking and the technique needed.
The mixer is incredibly durable and weighs 13.5 kg!
I can not speak highly enough of the performance, strength, durabilty and of course the look.

the coating on the beaters is very durable. i have beaters that have been used for many years with no wear & tear at all. I think you might be referring to the coating coming off ONLY if the beater is too low in the bowl and scraps against the bottom of the bowl. this is easily heard as a scrapping sound. the ‘bowl to beater’ clearance can easily be ajusted with a little turn of the adjustment screw which is very visable in the ‘neck’ of the mixer when the head is lifted. the setting at the factory is placed at 1mm – which is normally perfect.
if you do need to adjust this it takes a second – you only need a flat bladed screw driver.
please do not be concerned with the coating… it really is very durable.
if it was a problem i promise you kitchenaid would have rectified the coting years ago.

I have just purchased a KitchenAid mixer and used it for the first time today. After creaming butter and sugar, I found that the creamed mixture sticks to the bottom of the bowl when other ingredients such as eggs, flour & liquid are added. Is there any way of avoiding this other than removing the bowl and scraping the bottom after each addition of flour?

Hello Marcelle,
Sometimes this happens, particularly in winter – the stainless steel bowl is cold and setting the creamed mixture. In the cooler months I always rinse the bowl in hot water to warm it up (I then use this water in the sink to rinse my dishes as I cook – helps keep me tidy)!
The stainless steel bowl is wonderful for keeping ingredients cool (fabulous) in summer and this prevents mixtures curdling and splitting. As the KitchenAid is a commercial style appliance is it designed for hot kitchens where the ovens are blazing.
So once the bowl is warm, quickly dry then pop in the butter (soft room temp so in cold months you might need to give it burst in the microwave of pop into a bowl of a little boiling water. The butter must be soft to whip up. Using the flat beater, beat the butter lightly then add the sugar. Cream on speed 6 or 8 and begin adding the eggs once the mixture is lightly and fluffy. I usually wipe the bowl dpown a couple of times during the mixing.
Once you are used to this new technique you will be producing beautiful cakes with a fabulous texture and mouthfeel.
